INGREDIENTS:
Zucchini
Olive Oil
Minced Garlic
Chilli Flakes
Oregano
Tomatoes
Bell Peppers
Baby Corn
Parmesan Cheese
Basil Leaves
Salt
Black Pepper Powder
METHOD:
Trim and cut the zucchini into spirals in the form of long noodles to be about the length of spaghetti.
Add olive oil, garlic, and the chilli flakes to a large in a pan with the bell peppers and baby corn, cook it well and add the zucchini noodles into it.
Toss the noodles with pasta tongs and addd salt and pepper powder and cook until al dente — they should still have a crunch. Do not let the noodles cook any longer, or else they will become mushy. As they cook, keep tossing so that all the zucchini noodles have a chance to hit the bottom of the pan.
Stir in the tomatoes, basil, and parmesan cheese, and then cook for one minute. Use pasta tongs to transfer the noodles, tomatoes, veggies and basil to a serving dish and enjoy it!
