INGREDIENTS:
2 small avocados, peeled
2 green onions, thinly sliced
1 small tomato, finely chopped
1 tbsp finely chopped fresh coriander leaves
2 tbsp lime juice
2 celery stalks, trimmed, cut into sticks
1 medium carrot, peeled, cut into sticks
1 medium red capsicum, cut into sticks
METHOD:
Place avocado in a bowl. Roughly mash with a fork. Add onion, tomato, coriander, lime juice and yoghurt. Stir to combine. Season with salt and pepper.
Serve it with vegetable sticks and enjoy!
