INGREDIENTS:
Greek Yogurt
Black Olives
Finely diced Red Bell Pepper
Finely diced Onion
Chopped Fresh Oregano
Lemon Juice
Freshly ground Black Pepper
Large Cucumbers (trimmed and cut lengthwise into thin strips)
METHOD:
In a bowl, stir together the yogurt, olives, peppers, onion, oregano, lemon juice, and pepper.
Spoon the mixture onto the cucumber slices, spreading into an even layer. Roll the cucumber slices up like pinwheels. Serve immediately or refrigerate until ready to serve.
